Extra Virgin olive oil
Riviera Ligure DOP – Riviera dei Fiori
Italian oil, 100% Taggiasca olives – Cold extracted
It is a product of the highest quality, obtained from selected Taggiasca olives, pressed immediately after harvesting in our mill.
In particular, the milling process is carried out with specific attention to transferring the maximum amount of polyphenols contained within the olives to the resulting oil. The crushing is done with a high-speed, water-cooled knife crusher; the malaxation is brief and at a controlled temperature; and the extraction takes place using a two-phase technology, meaning with no or minimal water added to the olive paste during extraction (water tends to wash away the polyphenols present in the olive paste).
Produced cold and packaged unfiltered after simple natural decantation. The bottle is wrapped in an elegant gunmetal-coloured aluminum sheet, which ensures the product’s protection from light.

Uses
All our Taggiasca olive oils have a fragrant scent, a delicate taste and are ideal for those who do not like intense flavours.
The Riviera Ligure DOP is particularly recommended for dressing raw fish, smoked salmon, pasta (in place of butter) and in general, for all the more delicate-flavoured dishes.
Storage instructions
Extra virgin olive oil must be stored away from direct sources of light since light greatly accelerates the natural phenomenon of oxidation. In this case, the wrapped bottle ensures complete protection against light for a better preservation of the sensory characteristics of the product.
Prolonged exposure to heat also has a negative effect on the oil, even if less damaging than light. We advise you, therefore, to store this product in a cool place away from heat sources.
If you have stocked up on this product and want to keep it in the best possible condition, store the bottles closed at a temperature close to 15 °C, if possible (in the cellar or garage, for example).
